1 ½ cups All-purpose flour
½ cup Cocoa powder
1 tsp Baking soda
½ tsp Salt
¾ cup Peanut butter
½ cup Sugar
½ cup Brown sugar
2 large Eggs
1 tsp Vanilla extract
1 cup Zucchini (grated)
½ cup Chocolate chips (optional)
Instructions
Preheat your oven to 350°F (175°C). Grease and flour a 9x5-inch loaf pan.
In a medium bowl, mix together the flour, cocoa powder, baking soda, and salt. This helps to evenly distribute the leavening agents.
In a large bowl, combine the peanut butter, sugar, and brown sugar. Mix until creamy and well blended.
Add in the eggs one at a time, followed by the vanilla extract. Beat well after each addition.
Gradually add the dry ingredients to the wet mixture, mixing until just combined. Be careful not to overmix, as this can lead to dense bread.
Fold in the grated zucchini and chocolate chips, if using. The zucchini will add moisture to the batter.
Pour the batter into the prepared loaf pan and smooth the top with a spatula.
