2 ripe peaches, halved and pitted
2 ripe nectarines, halved and pitted
8 ounces burrata cheese
4 cups mixed greens (arugula, spinach, or your choice)
1 cup fresh basil leaves, packed
½ cup extra-virgin olive oil
1 clove garlic, minced
Salt and pepper, to taste
Chopped toasted nuts (like almonds or walnuts) for garnish
Balsamic reduction (optional) for garnish
Fresh basil leaves for decoration
Instructions
Prepare the Basil Oil: In a blender or food processor, combine the fresh basil leaves, olive oil, minced garlic, salt, and pepper. Blend until smooth and set aside.
Grill the Fruits: Preheat your grill over medium-high heat. Lightly brush the peaches and nectarines with olive oil and grill cut-side down for about 4-5 minutes until tender, then flip and grill for an additional 2-3 minutes.
Assemble the Salad: In a large serving bowl, place the mixed greens as a base. Tear the burrata into pieces and scatter over the greens. Add the grilled peach and nectarine halves on top.
Drizzle with Basil Oil: Generously drizzle the prepared basil oil over the salad.
Garnish: Sprinkle the chopped nuts on top, and if desired, drizzle with balsamic reduction.
