- 1 pound White fish fillets (cod or haddock recommended)
- 1 cup Panko breadcrumbs
- 1/2 cup All-purpose flour
- 2 Eggs, beaten
- 1 teaspoon Salt
- 1 teaspoon Paprika
- 1/2 teaspoon Garlic powder
- 1/2 teaspoon Black pepper
- 2 tablespoons Olive oil
Instructions
- Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper for easy cleanup.
- Cut the fish fillets into finger-sized strips, about 1-inch wide.
- In a shallow dish, mix together the flour, salt, paprika, garlic powder, and black pepper.
- In another shallow dish, beat the eggs until well combined.
- In a third dish, place the panko breadcrumbs.
- Dredge each fish strip in the flour mixture, shaking off any excess.
- Next, dip the floured fish in the beaten eggs, allowing any excess to drip off.
- Finally, roll the fish in the panko breadcrumbs until fully coated.
- Place the coated fish fingers on the prepared baking sheet, ensuring they are not touching.
- Drizzle the olive oil over the fish fingers to help them crisp up in the oven.
- Bake for 15-20 minutes, flipping halfway through, until golden brown and cooked through.
