A delightful blend of rich chocolate brownie, creamy cheesecake, and vibrant flavors of fresh strawberries and bananas.
Ingredients
Scale:
1/2 cup (1 stick) unsalted butter, melted
1 cup granulated sugar
1/2 cup brown sugar, packed
2 large eggs
1 teaspoon vanilla extract
1/2 cup all-purpose flour
1/3 cup cocoa powder
1/4 teaspoon salt
8 oz cream cheese, softened
1/2 cup powdered sugar
1 cup heavy cream
1 cup fresh strawberries, sliced
1 banana, sliced
Instructions
Preheat your oven to 350°F (175°C). Grease an 8x8 inch baking pan and line it with parchment paper, leaving some overhang for easy removal.
In a mixing bowl, combine the melted butter, granulated sugar, and brown sugar. Whisk until smooth and well combined.
Add in the eggs, one at a time, mixing well after each addition, followed by the vanilla extract.
In a separate bowl, sift together the flour, cocoa powder, and salt. Gradually fold this mixture into the wet ingredients until just combined; do not overmix.
Pour the brownie batter into the prepared baking pan and spread it evenly. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out mostly clean with a few moist crumbs.
While the brownie is baking, make the cheesecake layer. In a mixing bowl, beat the softened cream cheese until smooth. Gradually add the powdered sugar, mixing until fully incorporated.
In another bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until smooth and fluffy.
Once the brownies are done baking, remove them from the oven and let them cool for about 10 minutes. Spread the cheesecake layer over the brownie base and refrigerate for at least 2 hours to set.
Before serving, top the cheesecake layer with sliced strawberries and bananas. Cut into bars and enjoy your strawberry banana brownie cheesecake bars!
