Ingredients

- 1 lb ground beef
- 1 medium onion, diced
- 1 bell pepper, diced
- 3 cups potatoes, diced (Yukon Gold or red potatoes work best)
- 1 cup beef broth
- 1 cup ketchup
- 2 tablespoons Worcestershire sauce
- 1 tablespoon yellow mustard
- 1 tablespoon brown sugar
- 1 teaspoon garlic powder
- Salt and pepper to taste
- 1 cup shredded cheddar cheese (optional)
Instructions
- In a large skillet over medium heat, brown the ground beef. Cook until no longer pink, about 5-7 minutes. Drain excess fat.
- Add the diced onion and bell pepper to the skillet. Sauté for about 3-4 minutes until the vegetables are softened.
- Stir in the diced potatoes, beef broth, ketchup, Worcestershire sauce, mustard, brown sugar, garlic powder, salt, and pepper. Mix well to combine.
- Cover the skillet and let it simmer on low heat for about 20-25 minutes, or until the potatoes are tender, stirring occasionally.
- If using, sprinkle shredded cheddar cheese over the top, cover again, and let melt for 2-3 minutes.
- Once everything is well combined and heated through, remove from heat and serve hot.
