Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, heat the olive oil over medium heat. Add the diced onion and bell pepper, cooking until softened, about 3-5 minutes. Add the minced garlic and cook for an additional 1 minute.
  3. Add the ground beef to the skillet, breaking it apart with a spoon. Cook until browned and no longer pink, about 6-8 minutes. Season with salt and pepper.
  4. Stir in the Sloppy Joe sauce and let it simmer for 2-3 minutes until heated through.
  5. Transfer the beef mixture to a greased 9x13-inch baking dish, spreading it evenly across the bottom.
  6. Open the can of biscuits and cut each biscuit into quarters. Scatter the biscuit pieces over the beef mixture.
  7. Sprinkle the shredded cheddar cheese over the top of the biscuits.
  8. Bake in the preheated oven for 20-25 minutes, or until the biscuits are golden brown and baked through.
  9. Let the casserole cool for a few minutes before serving. Enjoy!
