Ingredients
Scale:
- 4 (6 oz each) Salmon fillets
- 1 bunch Asparagus, trimmed
- 1 pint Cherry tomatoes, halved
- 1 medium Red onion, sliced
- 3 tablespoons Olive oil
- 3 cloves Garlic, minced
- 1 Lemon, zested and juiced
- 1 teaspoon Dried oregano
- 1 teaspoon Salt
- ½ teaspoon Black pepper
Instructions
- Preheat your oven to 400°F (200°C).
- Line a large baking sheet with parchment paper.
- In a large bowl, combine the olive oil, minced garlic, lemon juice, lemon zest, dried oregano, salt, and black pepper. Whisk until well blended.
- Add the asparagus, cherry tomatoes, and red onion to the bowl. Toss until everything is evenly coated with the olive oil mixture.
- Spread the vegetables onto one side of the prepared baking sheet.
- Place the salmon fillets on the other side of the sheet and brush with the remaining olive oil mixture.
- Bake in the preheated oven for 15-20 minutes or until the salmon flakes easily with a fork.
- Remove from the oven and let it cool for a few minutes before serving.
