1 pound Sausage (Italian or smoked)
1 cup Uncooked long-grain rice
2 cups Chicken broth
1 medium Onion, chopped
1 (any color) Bell pepper, chopped
3 cloves Garlic, minced
1 teaspoon Salt
1/2 teaspoon Pepper
1 teaspoon Italian seasoning
1 cup Frozen peas
1 cup Shredded cheese (optional)
Instructions
Preheat your oven to 350°F (175°C).
In a large skillet, cook the sausage over medium heat until browned, about 5-7 minutes. Break it apart with a spatula as it cooks for even browning.
Add the chopped onion and bell pepper to the skillet. Sauté for 3-4 minutes until the vegetables soften.
Stir in the minced garlic, salt, pepper, and Italian seasoning. Cook for an additional minute until fragrant.
Add the uncooked rice, stirring to combine with the sausage and vegetables.
Pour in the chicken broth and bring the mixture to a boil. Once boiling, reduce the heat to a simmer and cover the skillet. Cook for 15 minutes.
After 15 minutes, stir in the frozen peas and remove from heat. If using cheese, sprinkle it on top at this stage.
Transfer the mixture to a greased 9x13 inch baking dish, spreading it evenly. Cover with foil and bake for 20 minutes.
Remove the foil and bake for an additional 10 minutes, or until the rice is tender and the cheese is melted and bubbly.
Let the casserole sit for 5 minutes before serving to allow it to set.
