A nostalgic favorite with a modern twist, these treats combine the warm, sweet aroma of caramel with the delightful crunch of crispy rice treats.
Ingredients
Scale:
4 tablespoons butter
10 ounces marshmallows (about 4 cups)
6 cups rice cereal
1 cup homemade salted caramel sauce
1 teaspoon sea salt (for sprinkling)
1 cup sugar (for salted caramel)
6 tablespoons butter (for salted caramel)
1/2 cup heavy cream (for salted caramel)
1 teaspoon sea salt (for salted caramel)
Instructions
Start by making the homemade salted caramel. In a medium saucepan, heat the sugar over medium heat, stirring constantly until it melts and turns a golden amber color. This process takes about 5-7 minutes.
Once the sugar is melted, carefully add the butter and stir until melted and combined. Then, slowly pour in the heavy cream while stirring. Be cautious as the mixture will bubble up. Stir until smooth, then remove from heat and stir in sea salt. Set aside to cool slightly.
In a large mixing bowl, melt the butter over low heat in a large saucepan. Add the marshmallows, stirring frequently until completely melted and smooth.
Remove the saucepan from heat, and quickly stir in the rice cereal until well coated with the marshmallow mixture.
Drizzle the cooled salted caramel over the rice cereal mixture and gently fold until well combined. Be careful not to crush the rice cereal.
Transfer the mixture into a greased 9x13-inch baking dish. Use a spatula to press the mixture evenly into the pan without packing it too tightly.
Sprinkle a little extra sea salt on top for flavor. Allow the treats to cool for at least 30 minutes, then cut into squares and serve.
