4-5 medium fresh plums, pitted and sliced
1/2 cup unsalted butter (1 stick)
3/4 cup brown sugar
1 1/2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1/2 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
1/2 cup milk (or plant-based milk for a vegan version)
Instructions
Preheat your oven to 350°F (175°C). Grease a 9-inch round cake pan with cooking spray or butter, ensuring the bottom and sides are well-coated.
In a medium saucepan, melt 1/2 cup of unsalted butter over medium heat. Once melted, add 3/4 cup of brown sugar, stirring until the sugar is dissolved and the mixture is bubbling gently.
Arrange the sliced plums in a circular pattern in the bottom of the prepared cake pan. Pour the caramelized butter and sugar mixture evenly over the plums, ensuring they are well coated.
In a large mixing bowl, sift together 1 1/2 cups of all-purpose flour, 1 teaspoon of baking powder, and 1/2 teaspoon of salt. Set aside.
In another bowl, whisk together 1/2 cup of granulated sugar, 2 large eggs, and 1 teaspoon of vanilla extract until smooth and fluffy.
Add the milk and the dry flour mixture to the egg mixture, folding gently until just combined. Be careful not to overmix; a few lumps are okay.
Pour the batter over the plums in the cake pan, spreading it evenly. Bake in the preheated oven for 40-45 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.
Allow the cake to cool in the pan for about 10 minutes. Carefully invert it onto a serving plate, letting the plums and caramel sauce drizzle over the cake.
