Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9-inch round cake pan with cooking spray or butter, ensuring the bottom and sides are well-coated.
  2. In a medium saucepan, melt 1/2 cup of unsalted butter over medium heat. Once melted, add 3/4 cup of brown sugar, stirring until the sugar is dissolved and the mixture is bubbling gently.
  3. Arrange the sliced plums in a circular pattern in the bottom of the prepared cake pan. Pour the caramelized butter and sugar mixture evenly over the plums, ensuring they are well coated.
  4. In a large mixing bowl, sift together 1 1/2 cups of all-purpose flour, 1 teaspoon of baking powder, and 1/2 teaspoon of salt. Set aside.
  5. In another bowl, whisk together 1/2 cup of granulated sugar, 2 large eggs, and 1 teaspoon of vanilla extract until smooth and fluffy.
  6. Add the milk and the dry flour mixture to the egg mixture, folding gently until just combined. Be careful not to overmix; a few lumps are okay.
  7. Pour the batter over the plums in the cake pan, spreading it evenly. Bake in the preheated oven for 40-45 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.
  8. Allow the cake to cool in the pan for about 10 minutes. Carefully invert it onto a serving plate, letting the plums and caramel sauce drizzle over the cake.
  9. Let the cake cool completely before slicing. Serve at room temperature, and enjoy the rich, fruity flavors!
