Instructions

  1. Rinse the rice under cold water in a fine-mesh strainer until the water runs clear. This removes excess starch and helps achieve fluffy rice.
  2. In a medium saucepan, combine the rinsed rice, water or vegetable broth, salt, and black pepper. Bring to a boil over high heat.
  3. Once boiling, reduce the heat to low, cover the saucepan, and let it simmer for about 18-20 minutes, or until the rice is tender and has absorbed all the liquid. Avoid lifting the lid during cooking.
  4. After the rice has cooked, remove it from heat and let it sit, covered, for 5 minutes. This step allows the rice to steam and become fluffy.
  5. Fluff the rice with a fork and then stir in the olive oil, basil pesto, and grated Parmesan cheese. Mix until well combined, ensuring every grain is coated with that delicious pesto.
  6. Taste and adjust seasonings if necessary. You may want to add a touch more salt or pepper to enhance the flavors.
  7. Transfer the Pesto Rice to a serving dish, garnish with fresh basil leaves if desired, and serve warm.
