1 pound Ground beef
2 cups Shredded cheese (cheddar, Monterey Jack, or a blend)
8 Tortillas (small flour or corn)
1/2 medium Chopped onion
1 teaspoon Garlic powder
1 teaspoon Ground cumin
1/2 teaspoon Salt
1/4 teaspoon Pepper
2 tablespoons Olive oil
Instructions
In a skillet over medium heat, add 1 tablespoon of olive oil. Once hot, add chopped onions and sauté until translucent, about 3-4 minutes.
Add the ground beef to the skillet, breaking it apart with a spatula. Cook until browned, about 5-7 minutes. Drain excess fat if necessary.
Season the beef with garlic powder, ground cumin, salt, and pepper. Mix well and cook for an additional 2 minutes for the flavors to meld.
Remove the beef mixture from the skillet and set aside. Wipe the skillet clean and return it to the heat.
Place a tortilla in the skillet and sprinkle a generous amount of cheese on half of the tortilla.
Add a couple of spoonfuls of the beef mixture on top of the cheese, then fold the tortilla over to create a half-moon shape.
Cook for 2-3 minutes on each side, or until the tortilla is golden brown and the cheese is melted.
Repeat with the remaining tortillas, adding more oil to the skillet as needed. Cut the quesadillas into small wedges and serve warm.
