These savory little wonders are not just individual portion meatloafs; they are a delightful, mini meatloaf recipe that transforms a classic dish into a fun, family-friendly meal.
Ingredients
Scale:
1 pound ground beef
1 cup breadcrumbs
1 large egg
1/4 cup milk
1/4 cup ketchup
1/2 medium onion, finely chopped
2 cloves garlic, minced
1 tablespoon Worcestershire sauce
1 teaspoon salt
1/2 teaspoon black pepper
1/2 cup optional: shredded cheese
Instructions
Preheat your oven to 350°F (175°C).
In a large bowl, combine the ground beef, breadcrumbs, egg, milk, ketchup, chopped onion, minced garlic, Worcestershire sauce, salt, and pepper. Mix until just combined; do not overmix to keep the muffins tender.
Lightly grease a muffin tin or line it with muffin liners.
Scoop the meat mixture into the muffin tin, filling each cup about three-quarters full. If using cheese, sprinkle it on top of each muffin.
Bake in the preheated oven for 20-25 minutes, or until the internal temperature reaches 160°F (70°C) and the tops are golden brown.
Remove from the oven and let the muffins rest for 5 minutes before removing them from the tin.
