  1. Pat the pork chops dry with paper towels. Season both sides with salt and black pepper.
  2. In a large skillet, heat the olive oil over medium-high heat. Once hot, add the pork chops and sear for about 4-5 minutes on each side, until golden brown. Remove from the skillet and set aside.
  3. In the same skillet, add the minced garlic and sliced mushrooms. Sauté for 2-3 minutes until the mushrooms are tender.
  4. Pour in the chicken broth, scraping the bottom of the skillet to release any browned bits. Bring to a simmer.
  5. Stir in the heavy cream, thyme, and oregano. Allow the sauce to simmer for another 2-3 minutes until it slightly thickens.
  6. Return the pork chops to the skillet, spooning the sauce over them. Reduce heat to low, cover, and cook for an additional 5-7 minutes, or until the pork reaches an internal temperature of 145°F.
  7. Once cooked, remove from heat and sprinkle with fresh parsley before serving.
