1 pound large shrimp, peeled and deveined (about 16-20 shrimp)
1 red bell pepper, cut into 1-inch pieces
1 green bell pepper, cut into 1-inch pieces
1 red onion, cut into wedges
Wooden or metal skewers
Instructions
Prepare the Marinade: In a bowl, whisk together the tequila, lime juice, olive oil, honey, minced garlic, cumin, chili powder, salt, black pepper, and cayenne pepper until well combined.
Marinate the Shrimp: Add the shrimp to the marinade, ensuring each piece is well coated. Cover and refrigerate for at least 30 minutes to 1 hour.
Prepare the Skewers: Soak the wooden skewers in water (if using) and preheat your grill to medium-high heat (about 400°F).
Assemble the Kabobs: Thread the marinated shrimp, red and green bell peppers, and red onion onto the skewers, alternating between the shrimp and vegetables.
Grill the Kabobs: Place the skewers on the preheated grill. Cook for about 2-3 minutes on each side, or until the shrimp turn pink and opaque and the vegetables are slightly charred.
Serve: Once cooked, remove the kabobs from the grill and serve immediately.
