2 teaspoons Baking powder
1 teaspoon Baking soda
2 teaspoons Cinnamon
1/2 teaspoon Nutmeg
1/2 teaspoon Salt
3/4 cup Granulated sugar
1/4 cup Brown sugar
2 Large eggs
1/2 cup Unsalted butter, melted
1 cup Milk
1 teaspoon Vanilla extract
1 1/2 cups Homemade apple pie filling
1/2 cup Maple syrup (for glaze)
1 cup Powdered sugar (for glaze)
Instructions
Preheat your oven to 350°F (175°C) and grease a muffin tin or line it with paper liners.
In a large mixing bowl, combine the flour, baking powder, baking soda, cinnamon, nutmeg, and salt. Whisk until well blended.
In another bowl, mix together the granulated sugar, brown sugar, eggs, melted butter, milk, and vanilla extract. Stir until smooth.
Gradually add the wet ingredients to the dry ingredients, mixing gently until just combined. Avoid overmixing, as this can make the muffins dense.
Fold in the homemade apple pie filling until evenly distributed throughout the batter.
Pour the batter into the prepared muffin tin, filling each cup about 2/3 full. Bake for 18-20 minutes or until a toothpick inserted in the center comes out clean.
While the muffins bake, prepare the maple glaze by whisking together the maple syrup and powdered sugar in a small bowl until smooth.
Once baked, let the muffins cool in the tin for 5 minutes before transferring them to a wire rack. Drizzle the maple glaze over the warm muffins for a delightful finish.
