If you've ever savored the satisfying crunch of perfectly pan-fried dumplings, you know the magic that is homemade potstickers. The moment you bite into one, the warm filling bursts forth, mingling with the delightful crispy texture of the wrapper.
Ingredients
Scale:
2 cups All-purpose flour
3/4 cup Water (hot)
1 pound Ground pork
1 cup Cabbage (finely chopped)
1/4 cup Green onions (sliced)
2 cloves Garlic (minced)
1 tablespoon Ginger (minced)
2 tablespoons Soy sauce
1 tablespoon Sesame oil
1/2 teaspoon Salt
1/4 teaspoon Pepper
Instructions
In a mixing bowl, combine the flour and hot water to form a dough. Knead for about 5-10 minutes until smooth. Cover with a damp towel and let it rest for at least 30 minutes.
Meanwhile, prepare the filling: in a large bowl, mix together the ground pork, chopped cabbage, green onions, garlic, ginger, soy sauce, sesame oil, salt, and pepper. Ensure all ingredients are well incorporated.
After the dough has rested, divide it into small portions and roll each into a thin circle, about 3 inches in diameter. This will be your homemade dumpling wrappers.
Place about a tablespoon of the filling in the center of each wrapper. Fold the wrappers in half and pinch the edges to seal, ensuring no air is trapped inside.
Heat a non-stick skillet over medium heat and add a little oil. Arrange potstickers in the pan, cooking until the bottoms are golden brown, about 3-5 minutes.
Add enough water to cover the bottom of the pan (about 1/4 cup), then cover immediately to steam the dumplings for about 5-7 minutes until cooked through.
Remove the lid and allow any remaining water to evaporate, letting the potstickers crisp for an additional minute.
Serve hot with your choice of potstickers dipping sauce.
