A hearty meal combining the savory flavors of seasoned ground beef with fresh zucchini, baked together with a melty layer of cheese on top.
Ingredients
Scale:
- 1 pound Ground beef
- 2 medium Zucchini, sliced
- 1 medium Onion, diced
- 2 cloves Garlic, minced
- 1 cup Tomato sauce
- 1 ½ cups Cheddar cheese, shredded
- 1 teaspoon Italian seasoning
- ½ teaspoon Salt
- ¼ teaspoon Pepper
- 2 tablespoons Olive oil
Instructions
- Preheat the oven to 375°F (190°C). This ensures even cooking for your casserole.
- In a large skillet, heat the olive oil over medium heat. Add the diced onion and cook until translucent, about 3-4 minutes.
- Add the minced garlic, and sauté for another minute until fragrant.
- Increase the heat to medium-high, then add the ground beef. Cook until browned, about 5-7 minutes, breaking it apart with a wooden spoon.
- Stir in the tomato sauce, Italian seasoning, salt, and pepper. Allow to simmer for 3-5 minutes.
- In a greased baking dish, layer half of the zucchini slices on the bottom.
- Spread half of the beef mixture over the zucchini, then sprinkle with half of the cheese.
- Repeat the layers with the remaining zucchini, beef mixture, and cheese.
- Cover the dish with aluminum foil and bake for 25 minutes.
- Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden brown.
- Allow the casserole to cool for a few minutes before serving.
