Coconut milk - 1 can (13.5 oz)

Instructions
In a large pot, heat the vegetable oil over medium heat. Add the cumin seeds and sauté until they begin to pop, which should take about 1 minute.
Add the chopped onions to the pot. Sauté for 5-7 minutes, or until they turn golden brown and fragrant.
Stir in the minced garlic and grated ginger, cooking for an additional 1-2 minutes until aromatic.

Reduce the heat to low, cover the pot, and cook for 15-20 minutes, or until the potatoes are tender and the green beans are bright and crisp.
