2 cups fresh cucumbers, diced (about 2 medium cucumbers)
1 large ripe mango, peeled and diced
1 red bell pepper, diced
1/4 cup red onion, finely chopped
1/4 cup fresh cilantro, chopped
3 tablespoons lime juice (freshly squeezed is best)
2 tablespoons olive oil
1 tablespoon honey or agave syrup

Instructions
Start by preparing the dressing. In a small bowl, whisk together the lime juice, olive oil, honey, salt, and pepper. Set aside and let the flavors meld while you prepare the salad.
Next, wash and chop your cucumbers into bite-sized pieces.
Peel the mango and cut it into small cubes.
Dice the red bell pepper and finely chop the red onion.
In a large mixing bowl, combine the diced cucumbers, mango, bell pepper, onion, and cilantro. Toss gently to mix the ingredients.
