Description
A dish that combines the comforting flavors of tacos with the convenience of a slow cooker.
Ingredients
Scale:
- 1 lb Ground beef (or turkey)
- 1 packet (about 1 oz) Taco seasoning
- 1 can (10 oz) Rotel diced tomatoes with green chilies
- 2 cups Beef broth
- 3 cups Pasta (rotini or penne)
- 2 cups Shredded cheese (cheddar or Mexican blend)
- 1 can (15 oz) Black beans (optional), drained and rinsed
- ¼ cup Chopped green onions (for garnish)
Instructions
- In a skillet over medium heat, brown the ground beef until fully cooked, about 5-7 minutes. Drain excess grease.
- Add the taco seasoning to the beef, mixing well to coat. Cook for another 2 minutes to release the flavors.
- Transfer the seasoned beef to your slow cooker. Add the Rotel tomatoes, beef broth, and black beans (if using).
- Stir in the uncooked pasta. Make sure it’s submerged in the liquid for even cooking.
- Cover the slow cooker and cook on low for 4 hours or on high for 2 hours, until the pasta is tender.
- Once cooked, stir in the shredded cheese until melted and creamy. Adjust seasoning if needed.
- Garnish with chopped green onions before serving.
