- 2 cups apples, peeled and diced (about 2 medium apples)
- 1/4 cup brown sugar (for topping)
- 1 teaspoon cinnamon (for topping)
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9x5-inch loaf pan with cooking spray or butter.
- In a large mixing bowl, combine the flour, sugar, baking powder, baking soda, salt, and cinnamon. Whisk together until well combined.
- In another bowl, mix the vegetable oil, eggs, and vanilla extract. Stir until well blended.
- Pour the wet ingredients into the dry ingredients and mix until just combined. Avoid overmixing to keep the bread light.
- Gently fold in the diced apples until evenly distributed throughout the batter.
- Pour the batter into the prepared loaf pan, smoothing the top with a spatula.
- In a small bowl, mix the brown sugar and cinnamon for the topping. Sprinkle it evenly over the batter.
- Bake in the preheated oven for 50-60 minutes. The bread is done when a toothpick inserted in the center comes out clean.
- Allow the bread to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
