Ingredients

- 2 cups all-purpose flour
- 1/2 teaspoon salt
- 1 teaspoon baking powder
- 1/2 cup unsalted butter, chilled and cubed
- 5-6 tablespoons ice water
- 2 cups apples, peeled and chopped
- 1/3 cup sugar
- 1 teaspoon cinnamon
- 1 tablespoon lemon juice
- Vegetable oil, for frying
- 1/2 cup sugar mixed with 1 teaspoon cinnamon (for coating)
Instructions
- In a large bowl, whisk together the flour, salt, and baking powder.
- Add the chilled butter and mix until the mixture resembles coarse crumbs.
- Gradually add ice water, one tablespoon at a time, mixing until the dough comes together.
- Form the dough into a ball, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
- While the dough chills, prepare the apple filling. In a medium bowl, combine the chopped apples, sugar, cinnamon, and lemon juice.
- Roll out the chilled dough on a lightly floured surface to about 1/8 inch thick. Cut into circles using a 4-inch biscuit cutter.
- Place a tablespoon of the apple filling in the center of each dough circle. Fold the dough over to form a half-moon shape and press the edges to seal.
- In a deep pot, heat the vegetable oil to 350°F (175°C). Carefully lower the hand pies into the hot oil, frying in batches to avoid overcrowding.
- Fry for about 3-4 minutes on each side or until they are golden brown. Remove them with a slotted spoon and drain on paper towels.
- While still warm, roll the pies in the cinnamon sugar coating until well covered.
