Deep Fried Apple Hand Pies

  1. In a large bowl, whisk together the flour, salt, and baking powder.
  2. Add the chilled butter and mix until the mixture resembles coarse crumbs.
  3. Gradually add ice water, one tablespoon at a time, mixing until the dough comes together.
  4. Form the dough into a ball, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
  5. While the dough chills, prepare the apple filling. In a medium bowl, combine the chopped apples, sugar, cinnamon, and lemon juice.
  6. Roll out the chilled dough on a lightly floured surface to about 1/8 inch thick. Cut into circles using a 4-inch biscuit cutter.
  7. Place a tablespoon of the apple filling in the center of each dough circle. Fold the dough over to form a half-moon shape and press the edges to seal.
  8. In a deep pot, heat the vegetable oil to 350°F (175°C). Carefully lower the hand pies into the hot oil, frying in batches to avoid overcrowding.
  9. Fry for about 3-4 minutes on each side or until they are golden brown. Remove them with a slotted spoon and drain on paper towels.
  10. While still warm, roll the pies in the cinnamon sugar coating until well covered.
