A flavorful and hearty dish that combines seasoned ground beef, black beans, corn, and a medley of spices, all slow-cooked to create a cheesy taco casserole.
Ingredients
Scale:
1 pound Ground beef
1 can (15 ounces) Black beans, drained and rinsed
1 cup Corn, frozen or canned
1 packet (1 ounce) Taco seasoning
1 can (10 ounces) Diced tomatoes with green chilies
2 cups Cheddar cheese, shredded
1 can (10.5 ounces) Nacho cheese soup
1 tablespoon Olive oil
1 bag Tortilla chips (optional)
Instructions
In a skillet over medium heat, add olive oil and brown the ground beef until fully cooked. Use a wooden spoon to break it apart as it cooks, which should take about 5-7 minutes.
Once the ground beef is browned, drain any excess fat and stir in the taco seasoning. Cook for an additional 2 minutes to allow the spices to become fragrant.
Transfer the seasoned beef to the slow cooker. Add the black beans, corn, diced tomatoes with green chilies, and nacho cheese soup. Stir until everything is well combined.
Cover the slow cooker and cook on low for 4-6 hours or on high for 2-3 hours. The key is to ensure everything heats through and the flavors meld nicely.
About 30 minutes before serving, add 1 cup of the shredded cheddar cheese on top. Cover again and allow it to melt into a gooey layer of cheesy goodness.
Serve hot, garnished with additional cheese if desired, and alongside tortilla chips for that perfect crunch.
