2 cups cottage cheese (preferably low-fat or fat-free)
1 cup shredded cheese (cheddar, mozzarella, or your favorite blend)
1 cup almond flour or coconut flour
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon dry herbs (like oregano or basil)
Salt and pepper to taste
1 teaspoon red pepper flakes (optional)
1 tablespoon nutritional yeast (optional)
Instructions
Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
In a mixing bowl, combine the cottage cheese with the shredded cheese and mix until fully combined.
Gradually incorporate the almond flour, garlic powder, onion powder, dry herbs, salt, and pepper into the cheese mixture. Stir until a thick, dough-like consistency forms.
Using a tablespoon or cookie scoop, portion out the mixture onto the prepared baking sheet and flatten each scoop slightly with the back of a spoon.
