2 pounds boneless, skinless chicken breasts
1 cup long grain white rice
3 cups chicken broth
1 cup heavy cream
1 medium onion, chopped
3 cloves garlic, minced
1 ½ cups frozen mixed vegetables (peas, corn, carrots)
1 cup shredded cheddar cheese
1 teaspoon salt
½ teaspoon black pepper
2 tablespoons olive oil
Instructions
Preheat your oven to 375°F (190°C).
In a large oven-safe skillet, heat the olive oil over medium heat. Add the chopped onion and cook until translucent, about 3-4 minutes.
Add the minced garlic and cook for an additional 30 seconds, until fragrant. Be careful not to let it burn.
Add the chicken breasts to the skillet, season with salt and pepper, and cook for about 5 minutes on each side, until browned.
Pour in the chicken broth and bring to a simmer. Stir in the rice and frozen mixed vegetables. Remove from heat.
Drizzle the heavy cream over the top and sprinkle with shredded cheddar cheese.
Cover the skillet with a lid or aluminum foil and transfer to the preheated oven. Bake for 30-35 minutes, or until the chicken is cooked through and the rice is tender.
Remove from the oven and let it sit for 5 minutes before serving.
