4 ripe bananas, sliced
1/2 cup (1 stick) unsalted butter, plus extra for greasing the pan
1 cup brown sugar, packed firmly
1 teaspoon vanilla extract
1 1/2 cups all-purpose flour, sifted
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
3/4 cup granulated sugar
2 large eggs, room temperature
1/2 cup buttermilk
Instructions
Preheat your oven to 350°F (175°C). Prepare a 9-inch round cake pan or cast-iron skillet by greasing it with butter.
In a small saucepan, melt the unsalted butter over medium heat. Add the brown sugar and stir until dissolved, creating a caramel sauce. Pour this mixture into the prepared pan and layer the sliced bananas on top.
In a large mixing bowl, combine the flour, baking powder, baking soda, and salt. In another bowl, cream together the granulated sugar and softened butter until light and fluffy. Add the eggs one at a time, then mix in the vanilla.
Alternate adding the dry flour mixture and buttermilk to the butter mixture, starting and ending with the dry ingredients. Mix until just combined.
