Baked Salmon with Feta & Sun-Dried Tomatoes

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine olive oil, minced garlic, dried oregano, lemon zest, salt, and pepper. Mix well to create a marinade.
  3. Place the salmon fillets in the marinade, ensuring each piece is well-coated. Let them marinate for at least 15 minutes.
  4. While the salmon marinates, mix together the crumbled feta cheese, chopped sun-dried tomatoes, fresh parsley, and lemon juice in a bowl.
  5. Line a baking dish with parchment paper or lightly grease it. Place the marinated salmon fillets in the baking dish skin-side down.
  6. Generously spoon the feta and sun-dried tomato mixture over each salmon fillet.
  7. Place the baking dish in the preheated oven and bake for 15-20 minutes, or until the salmon flakes easily with a fork.
  8. Remove the salmon from the oven and let it rest for a few minutes before serving.
