This dish is not just a meal; it’s a comforting embrace on a plate. The crispy layer of bacon, combined with a flavorful stuffing, turns a classic meatloaf into a gourmet experience.
Ingredients
Scale:
2 pounds Ground beef (80/20)
8 slices Bacon
1 cup Breadcrumbs
2 large Eggs
1 medium Onion, finely chopped
2 cloves Garlic, minced
½ cup Parmesan cheese, grated
2 tablespoons Worcestershire sauce
1 teaspoon Salt
½ teaspoon Black pepper
1 teaspoon Italian seasoning
1 medium Bell pepper, finely chopped (optional)
Instructions
Preheat your oven to 350°F (175°C).
In a large mixing bowl, combine the ground beef, breadcrumbs, eggs, chopped onion, minced garlic, Parmesan cheese, Worcestershire sauce, salt, black pepper, and Italian seasoning. If using bell pepper, add it here.
Mix everything together until just combined; avoid overmixing to keep the meatloaf tender.
Shape the meat mixture into a loaf on a baking sheet lined with parchment paper.
Lay the bacon slices over the top of the meatloaf, tucking the ends underneath.
Bake in the preheated oven for 1 hour, or until the internal temperature reaches 160°F (70°C). The bacon should be crispy and the edges golden.
Once cooked, let the meatloaf rest for 10 minutes before slicing. This helps retain the juices.
