4 pieces Boneless, skinless chicken breasts
1/2 cup Honey mustard sauce
2 tablespoons Olive oil
1 teaspoon Garlic powder
1 teaspoon Onion powder
1 teaspoon Salt
1/2 teaspoon Pepper
8 slices Bacon
1 cup Shredded Monterey Jack cheese
1/4 cup Chopped green onions (for garnish)
Instructions
In a bowl, combine the honey mustard sauce, olive oil, garlic powder, onion powder, salt, and pepper. Mix well.
Place the chicken breasts in a resealable plastic bag and pour in the marinade. Seal the bag, ensuring all chicken is coated. Marinate in the refrigerator for at least 30 minutes, or up to 4 hours for more flavor.
Preheat your grill to medium-high heat (about 375°F to 400°F).
Remove the chicken from the marinade and discard the leftover marinade. Grill the chicken for 6-7 minutes per side, or until fully cooked and internal temperature reaches 165°F.
During the last few minutes of grilling, top each chicken breast with 2 slices of bacon and 1/4 cup of shredded cheese. Close the grill lid to melt the cheese.
Once cooked, remove the chicken from the grill and let it rest for 5 minutes. Garnish with chopped green onions before serving.
